Our Favorite Recipes


                 






Avocado Tuna Salad
  • 1 Ripe Avocado
  • 1 can or packet of Tuna in water
  • 1 hard boiled egg
  • Salt and Pepper
  •          Drain the tuna and place in a bowl.

  •          Score the avocado lengthwise and widthwise and then scoop with spoon. Add to the bowl.

  •          Mash the avocado into the tuna with a fork until well integrated. 
  •          
  •          Stir in your chopped and peeled hard boiled egg. 

  •          Add salt and pepper to taste.

  •                                                 ENJOY!












Farmer's Casserole 

6 c. frozen shredded hash browns

1 1/2 c.shredded Cheddar cheese 

2 cups diced cooked ham 

1/2 c. sliced green onions 8 large beaten eggs 

(2) 12-ounce c. evaporated milk 

1/4 t.salt 1/4 t.pepper 

Arrange potatoes evenly in the bottom of the dish. 

Sprinkle with cheese, ham, and green onion. In a large mixing bowl, combine eggs, milk, salt and pepper. 

Pour egg mixture over potato mixture in dish.

Bake at 350 45-55 min.




  • Arkansas Green Beans


  • 5 (15 ounce) cans green beans, drained 

  • 7 slices bacon 


  • 1/4 cup butter, melted 


  • 7 teaspoons soy sauce 





         Let simmer on the the stove for at least 30 minutes





Bruschetta chicken 

4 skinless, boneless chicken breasts 

4 – 5 garlic cloves 

1 cup fresh basil 

1 tablespoon olive oil 

1 tsp. balsamic vinegar
1/4 cup water
1 package of cherry or grape tomatoes
1/2 red onion sliced

Preheat oven at 375 degrees. 

In a blender place the garlic, basil, olive oil, vinegar, water and pulse until pureed.

 Place the breasts in a casserole dish  and cover with the basil, garlic mixture. Top with mushrooms, tomatoes and onion.

 Cover with foil.  and bake for about 30 minutes or until chicken is fully cooked. During the last 10 minutes, take the foil off. 


Hot Roast Beef Sammie

     12 whole Dinner Rolls Or Small Sandwich Buns (or Hawaiian rolls)

  • 1 pound Thinly Shaved Roast Beef
  •  
  • 1/2 lb of ham

  • 1 pound Cheese ( your choice, but we like provolone or swiss or  cheddar) 
  • Mayo and or Spicy Mustard
  • Optional sauce Ingredients: Sriracha, horseradish, or aioli sauce. 





Making the Sammie:


Slice rolls in half. 

Spread condiments on top and bottom buns. 

Lay on roast beef and ham, then one or two slices of cheese. I prefer provolone or swiss. 

Wrap each sammy in his own foil sleeping bag. 

Bake the sandwiches, put them on a baking sheet in a 350 degree oven for 15 to 20 minutes or until cheese melts. ( Or if camping, pop them into your fire pit!) 

Serve, or store them in your fridge or cooler or freezer. 

Serve with fresh fruit!




Ham Beans and Cornbread

1 lb pinto beans
8 cups chicken broth 
1 (3/4 lb) ham hock
1 cup chopped ham
1 cup onion, chopped (1 small onion)
1/2 cup bell pepper, chopped
3 -4 garlic cloves, minced
1 (8 ounce) can tomato sauce
1/2 teaspoon black pepper
1/4 teaspoon ground red pepper
1/4 teaspoon cumin
salt

This is a recipe I adapted from Beans 101. I cheat and use Jiffy cornbread!! 


Turkey Burgers
1 lb. extra lean ground turkey 
1 egg white 
1/2 tsp. Worcestershire sauce 
1/4 c. finely chopped onion 
1/4 tsp. garlic powder 
1/4 tsp. poultry seasoning 
2 tsp. Dijon mustard


Make into patties and pan fry. Serve with home fries and salad. 

Wraps:

Chicken, black bean, corn, salsa, & avocado salad. Make into a wrap with lettuce or your favorite flat bread or tortilla. 



Grilled Teriyaki Salmon

1 lb of salmon
Marinade ( see below) 
Non stick cooking spray

Marinade: 
1/2 cup white wine
1/4 cup brown sugar
4 tablespoons soy sauce
4 cloves of garlic, minced
1/2 tsp of ground ginger

Marinate salmon in a gallon size bag, or in a large pan, for 30 minutes.
Drain excess marinade, saving a little for later
Coat pan with non stick spray
Grill fish on hot for 4- 5 minutes on each side, brushing with reserve marinade once at the beginning. 




You can also prepare a version of this recipe in the oven, at 375 degrees for 10-15 minutes. 

We serve with grilled garlic asparagus, and crusty bread. Or Twice Baked Potatoes!




Chili-Garlic Roasted Broccoli

2 tbs olive oil 
5 cloves of garlic
1 tbs of chili powder
1 tbs grill seasoning
1 large head of broccoli, cut into long pieces
Butter or cooking spray

Preheat oven to 425 degrees
Place olive oil, garlic, chili powder, and grill seasoning in the bottom of a large bowl and toss the broccoli in.
Prepare ( grease) your baking sheet, and spread your mixture into it. 
Roast at 425 degrees for 17- 20 minutes, or until ends are crisp on the broccoli.
