Happy New Year!

A few nights ago I started a long story about last year. D's meningitis and the aftermath.
I feel like we are finally out of the fog, and while I do want to write it out...Now just doesnt seem like the right time.
New Year is full of promise, and excitement, and freshness! We have big plans this year, and I cant wait to share it all.
For now, we are having a very lazy NYD. We made some yummy tacos, see recipes below..

Guacamole:
~Ripe Avocado(s) * Did you know, another way to find out if it is ripe is to look at the sticker. It should say " ripe" in tiny letters on the sticker.
~Pico de gallo ( diced tomatoes, diced white onion, diced jalapeno, tsp of minced garlic and a handful of chopped cilantro,  and a splash of lemon.)

Mix together with more lemon/lime juice and chill for 30 minutes. Eat with chips! Save some pico de gallo for your taco!

  • 2 cloves of garlic
  1. Place beef roast in crock of a slow cooker. Sprinkle taco seasoning over the beef; top with onion slices and other ingredients. Add water. 
  2. Cook on Low 8 to 10 hours. Or high 4- 5 hours. 
  3. Remove beef to a cutting board and shred with a pair of forks. Return beef to slow cooker and get the tortillas ready! 










I adapted a recipes.com recipe for shredded beef tacos, because we love extra stuff like garlic and chiles. 

The next day I usually make plan-overs and make enchilada casserole with the beef and with corn tortillas and layers of black beans and sour cream and cheese. 

It is not the traditional NYD fare, but claiming to be traditional just wouldn't work for me, and I have been lucky with it so far. :-)
